The cuisine's roots can be traced back to ancient times when Puglia was inhabited by various civilizations, each leaving behind culinary influences that have shaped the gastronomic landscape we know today.

1. Orecchiette
Arguably Puglia's most iconic food, Orichette literally translates to Little Ears, and it’s easy to see why. Ubiquitous across Puglia, the most famous display of these is in Bari, where the old ladies of the old town sell bags of them in the streets. While we'll be seeing Bari on our Private Journey, we're also going to be delving into the history of Puglian food, trying burnt wheat pasta, which comes from the days it was one of the poorest regions of Italy
2. Burrata
While it is taking over the world as one of the most premium ingredients today, burrata has a humble origin story in Puglia, where a farmer combined the scraps of mozzarella and cream to prevent them from spoiling. The rest as they say is history, and today its universally loved. In Puglia seeing the genesis of the cheese from field to table is an amazing experience, and one we'll be seeing in all its glory at a family-owned farm during our Private Journey to Southern Italy.
3. Focaccia
While Puglia has its fair share of phenomenal breads, the humble Focaccia is undoubtedly the king of them all. Fluffy, light and rich all at the same time, topped with juicy tomatoes and fragrant oregano—it’s some of the best bread I've ever had the joy of eating. Top it up with a hearty drizzle of olive oil and you don’t need a thing more. It’s simply perfect.
4. Puglian Wines
Puglia boasts a vibrant wine scene, with indigenous grapes like Primitivo and Negroamaro taking centre stage. These bold and expressive wines perfectly complement the region's strong flavours. Puglian wines are an essential part of the culinary experience, so be sure to raise a toast to the land's bounty.
5. Cucina Povera
While more of a concept than a food, Cucina Povera means the kitchen of the poor. As a traditionally poor region, Puglians had to learn to make the most of what they had available, which means Puglian food often had a lot of amazing vegetable and legume-based options such as Fave e Cicoria: Fave Beans and Chicory. One of the best examples of this is at Silva's in Fasano, where we had one of the best meals of our life, with simple food cooked by Silva's mama
6. Panzerotti
Deep Fried dough stuffed with Cheese and Tomatoes. Panzerotti is street food perfection that offers a delightful explosion of flavour and texture in every bite. No explanation is necessary, just pure indulgence for the senses.
